Homemade Red Velvet Ice Cream

Homemade Red Velvet Ice Cream topped with Red Velvet Crumbs

Since my mom loves to bake Red Velvet Cake, I decided to make my own version of Red Velvet but not a cake but an Ice Cream instead. Every time my mom bakes, she has left over Red Velvet cake so I decided to use this instead of throwing it away or just eating it as is. What I did was, I made it into crumbs. Then I searched for some recipes on the Internet on how to make an ice cream. Below are the ingredients I used.

*Homemade Red Velvet Ice Cream:

- 1 can fat free sweetened condensed milk
- 2 pint heavy whipping cream (all purpose cream)
- 6 cups crumbled red velvet cake
- 4oz 1/3 fat cream cheese, room temperature or warmed
- 1/2 tsp vanilla extract

First, figure out your red velvet cake crumbles. As you can see in my ingredients, I used a lot of crumbled red velvet cake but you can lessen this depending on your situation. You can also just crumble a store bought red velvet cake or cupcakes.

Once you have your crumbles ready, pour your heavy whipping cream or the all purpose cream into a large bowl. Make sure your whipping cream is as cold as possible. With an electric mixer, beat the cream until it is thick enough.

Then, empty the sweetened condensed milk in a separate bowl. Mix the vanilla extract and room temperature cream cheese. Add in 3 cups of red velvet crumbles and stir until smooth.

Add this to your all purpose cream and add another 2 cups of red velvet crumbs. This will make the ice cream a bit "chunkier" than the other ones. Reserve any other crumbles for topping.

Finally, place the ice cream mixture in a freezer safe container and freeze for 6 hours.

Once frozen, scoop out ice cream and top with extra red velvet crumbles. Enjoy!

Hainanese Delights @ Robinsons Metro East

Hainanese Delights @ Robinsons Metro East
This Thursday, Geraldine and I had dinner in Hainanese delights in Robinsons Metro East. We just went in to try something different at an affordable price. Aside from that, they offer Unlimited Hainan Rice so we thought that it would be sulit. We ordered their best selling Hainanese Delights and their Shrimp and Pork Dumplings. We decided to have half of the dumplings fried and the other half steamed so we get to taste both.

Hainanese Soup
Chili, Soy Sauce, Ginger
Hainanese Soup

Once we sat down we were served with house soup. I think it is some kind of stock. I am not sure if it is chicken stock but it surely made the soup flavorful. We also noticed three containers which contained different kinds of sauce: chili, soy sauce, and ginger.

Hainanese Delights' Chicken
The Hainanese Delight (white chicken) was okay. What made it tasty was its sauce. I do not know what it is made of but it has this sweet salty taste. The rice that this restaurant is so proud of was disappointing. Their rice is supposed to be “bursting with flavors”. I, however, did not taste the flavors they were so proud of. There was a little bit of ginger in there. I could taste it. I do not know about the other flavors but it surely was not bursting with it. It just goes to show that affordability compromises the quality.

Shrimp and Pork Dumplings (Steamed and Fried)
The other dish we had was the Bite of Both which consists of shrimp and pork dumplings. There were six small dumplings on the plate. They did not look like for “unlimited rice” purposes. We liked the fried dumplings. I am not a fan of steamed dumplings so I asked Geraldine what she thought about them. She told me that she would rather go to Siomai House, cheaper and tastes better. It is not that the dumplings tasted awful but they did not taste good either. The soy sauce that went along with the dumplings had a sweet taste in it.

What is hainan rice?
Hainanese Delights does not live up to its promise of offering flavorful Hainan rice. For us we would rather go to other fastfood chains and get better tasting chicken and dumplings for the same price. However, if you want to taste something different at an affordable price maybe you can give this place a go.

Chuck's Deli @ Eastwood

We went to Chuck’s Deli in Eastwood last Friday. They are known for their big sandwiches made either with a hoagie or ciabatta bread. Once we got inside we noticed the cozy feel in the restaurant with red and white interior. A hand sanitizer is also provided on each table. At the far end of the restaurant they have a huge chalkboard where their set meals are written (and drawn). The set meal includes a quarter slab + side order + drink with prices ranging from 199 to 299. Chuck’s Deli is also famous for its Slay the Buffy Challenge. The objective of the game is for the challenger to finish off the whole slab of buffalo chicken slabwich within 5 minutes. Whoever gets to do this will have the buffy for free, will get a challenge-winner t-shirt and will have their name written in the wall of fame.

Philly Cheese Steak

Philly Cheese Steak with Onion Rings
Geraldine said that If you’re looking for a classic sandwich, Chuck’s Deli’s Philly Cheese Steak is the best choice to satisgy that craving. It comes with your choice of onion rings or potato chips. In her case, she chose onion rings.

Asking her what she thought of it, "Although I am not a fan of onions, I find their onion rings good. You cannot taste the onion-after-taste some of us do not like. Also, their garlic sauce is to-die-for! I am not a fan of garlic but this sauce made me forget that. The onion rings dipped with the garlic sauce is indeed a great combination."

Philly Cheese Steak
Going back to the Philly Cheese Steak subwich, she ordered only a half slab since a whole slab is intended for a man’s appetite (according to her). She said she really likes it because of the tenderness of the strips of beef. Adding to the great taste are the American cheese, onions, mushrooms, and bell pepper.

She added, "With the first bite, you can easily fall in love with this subwich. In my case, it is the cheese that made me fall in love with it."

We both agreed that overall this is a HIT for your crave.

Reuben

Reuben with Homemade Potato Chips and Garlic Sauce
I ordered a half slab of Reuben because I thought that a quarter might be too small (this proved to be wrong because I was only able to eat half of the half slab). The sandwich is made with homemade Angus corned beef, Swiss cheese, sauerkraut, mustard and garlic sauce. I ordered this because I never had one before and it had a star beside its name which meant it is a bestseller. I also ordered their homemade potato chips along with it. We agreed that their garlic sauce and potato chips would be what we can call a perfect combination. The potato chips were crispy while the garlic sauce was soooo flavorful. Once the sauce gets in your mouth you will really taste the garlic in it but it was not too strong that it hurt your tongue.

Half-slab Reuben
We both agreed that the Reuben was too sour. Or maybe we were just not used to the taste of sauerkraut. Another thing we did not like about this was the spicy garlic sauce (we both have very low tolerance for spicy foods). I specifically told the waiter wag yung maanghang yet my sandwich had spicy garlic sauce in it.  Because I was too tired and hungry to have the sandwich replaced I just put non-spicy garlic sauce in it to contrast the strong flavor of sauerkraut and the spicy sauce. The corned beef was very oily as well. It was so oily that while you are slicing it the oil is coming out of the beef.

With all these in mind, we say that this is a MISS

We are not saying that their sandwich is not good. For a first timer, we are just saying that we do not like the Reuben sandwich in general. But we will definitely go back to Chuck’s Deli to try some of their other subwiches and slabwiches.

Now let's go to something sweet!

Oreo Vanilla Arce Dairy Milkshake

We ordered only one milkshake because it was already too cold since it was raining and it was also freezing cold inside the restaurant.

For us, there’s nothing special in Chuck’s Deli’s Oreo Vanilla Arce Dairy Milkshake. The taste of the milk overpowers the taste of the oreo and vanilla. It tasted like melted oreo flavored ice cream. Nothing fancy.

Maybe we will try another variety the next time we visit. But for now, this is a crave MISS
